Salsa Fresca Egg White Salad

It is no secret that I have been struggling with this blog over the last few weeks. While I love blogging, I also love running, biking, hiking, cooking, and strength training. Plus I work full time (sometimes full and a half time!), and of course, I need to make time for the Bear, Thing 1 and Thing 2! Don’t get me wrong… I am not complaining. I actually have a good problem which is that I love ALL these things and I want to do them all! There just aren’t enough hours in the day. I am sure a lot of you can relate!

Over the last few weeks, I have been contemplating on how to maintain this blog while continuing all the activities that I love.  This has been a tough decision but I have come to the conclusion that I am only going to blog when I have something to say. I am not going to force a topic or stress over creating a recipe on the weekends.  However, my goal is to blog 2-3 times a week. Wooo… I feel like I can breath now!

With that being said, I did have time to create one small, teeny, tiny recipe. I was definitely feeling more semi-homemade, Sandra Lee style than all-out, Martha Stewart style this weekend. Plus I can’t even say I thought up this recipe! Hah… it came straight from the masterminds over at Trader Joe’s, but they charge almost $4 for only 6 ounces of egg whites.

Salsa Fresca Egg White Salad
Cook time: 
Total time: 

Serves: 1
 

Ingredients
  • 3 eggs
  • 2 tablespoons salsa fresca

Instructions
  1. Place 3 eggs in a sauce pan. Add cold water to cover the eggs in the pan. Heat on high until the water just starts to boil. Remove from the heat and cover the pan. Let sit for 9 minutes.
  2. To cool the eggs, put them in ice water or refrigerate.
  3. Remove the eggshell and separate the egg whites from the cooked yolk.
  4. Chop the egg whites and mixed with salsa.

I figured that I can make a trunk load of egg white salad for that price! So I boiled some eggs and stole some salsa from the Bear (he is the king of chips and salsa). If you are feeling more like Martha Stewart, you can make this Salsa Fresca recipe which is amazing. Salsa Fresca Egg White Salad is great on toast, wrapped in a tortilla, or eaten with a big spoon!

  1. Wish I could give you some advice but I am terrible about balancing blogging in life. For me the moment I start living for the blog instead of blogging about my life is when I know it’s too much. For some reason I feel so accountable to post but the reality is that most people don’t care. I think it’s quality over quantity so post when you have something to say or an awesome recipe to share!   3. I can totally relate to how you feel! It is so hard to balance blogging on top of everything else. Sometimes I just need a break but I feel like I’ve made a commitment o myself so I just keep on keepin’ on. But really, I need to take a break. It’s like having a part time job on top of everything else and it can be exhausting.

    I think maybe picking a topic to keep up with once a week, like a meal/fitness plan or one recipe, is good and then if you feel up to sharing something else then so be it. We are supposed to do it because we enjoy it not because we feel forced to. That’s what I need to constantly remind myself!

    Like Davida said, whenever you feel like posting, we’ll be here reading so take it easy and enjoy life! :)

  4. Luckily for me, I can blog at work… I also can workout at work in the fitness center during my lunch hour. These are definitely a perk of my job and I’m not sure how I would balance blogging otherwise. On the weekends, I’m 100% about spending time with friends and family and therefore, could never see myself blogging then and during the week I just don’t know that I’d be as committed. I think it’s important to love what you’re doing and you don’t want to start to resent the blog. So, I think time off is good and posting when you have something good to say is great – we’ll be here!

  5. Oops, I laughed out loud at your question … “how do you balance blogging, work, fitness, and life?” The truth is, I think most of us are still struggling to find the balance! If anyone really did have “the answer,” I would be surprised! I LOVE blogging and wish I could spend 100 hours per week writing and reading blog posts, but sadly, I can’t. Something has to give sometimes, and that’s OK! Your readers will understand if/ when you need breaks. I like your plan of just posting when it’s right for you!
